After the series of Muslim dishes we turn now to a type of food which will under no circumstances be found in Muslim restaurants – bacon.
Bacon you say? In China? That’s right!
Mostly associated with Sichuan Province and the south of China, salt-cured meat and smoked meat are an integral part of the Chinese cooking culture. This type of meat is called 腊肉 (là ròu) after the 12th month of the Chinese lunar calendar. It is the coldest month of the year which is traditionally considered the best time to smoke or cure the meat. When it comes to meat types pork is naturally the most popular one and it really tastes like bacon or smoke ham. Duck, lamb, chicken and fish are also to be found in different areas of China.
Bacon Fried Rice
Fried Rice with Bacon is a dish with a very interesting flavor. It combines the classic Chinese fried rice with the taste of bacon, which is without a doubt a favorite for many in the west. If there are only Chinese restaurants around and you still want a little taste of home, this is definitely the dish to go with.
Even though fried rice is very common, fried rice with bacon is not as common as other fried rice dishes. Southern restaurants and Chengdu xiaochi places will usually have it on the menu while hangzhou xiaochi won’t necessarily. It’s also more expensive than your average fried rice dish but it’s worth every mao.
