Most people associate the word ‘noodle’ with the adjectives ‘long’ and ‘thin’ since long and thin strips of dough are the most common type of noodles. But not all noodles conform to this shape, some think out of the bowl and the result is not only delicious, it is also very diner-friendly. Continuing our series of posts dedicated to Muslim dishes, today we introduce two common (fried noodles) dishes available in most Muslim restaurants in China.
Fried Chopped Noodles
In the previous post we talked about Minced Meat Noodles which is a bolognese-like sauce made of minced meat and finely chopped vegetables over a bed long noodles . This dish is quite the opposite as the noodles are those who get chopped almost beyond recognition while the meat and vegetables are only cut but not really chopped.
Don’t worry. This dish always comes with a spoon and you don’t have to ask for it. It is virtually impossible to eat this this with chopsticks and no one will expect you to. The frying mix includes lamb and vegetables (usually cabbage, onion and sometimes carrot, zucchini or garlic scapes) and the sauce is tomato-based as the red color clearly indicates.
Fried Sliced Noodles
This dish is pretty much the same as the dish above and the only difference is the shape of the noodles. In this dish they are flat and squared and are very similar to Italian maltagliati or broken lasagna:
This dish also comes with a spoon, but unlike the chopped noodles it is also possible to eat with chopsticks (if you have time to kill).
