Some people say Fried Sauce Noodles (炸酱面 – zhǎ jiàng miàn) is very similar to spaghetti bolognese. I tend to disagree, because even though we are talking about thick noodles and meat sauce, the combination of tomatoes and beef (or pork) is very different than that of pork, beans and fresh cucumbers. If you are looking for something similar to bolognese in China you should go for noodles in Muslim restaurants where the use of tomatoes in a sauce is much more common.
If you just arrived in Beijing and want to take it easy and have something which is not that far from what you are used to, or if you feel like noodles but it’s too hot for soup, then Fried Sauce Noodles is exactly what you need. It’s not spicy, not hot, and thanks to the fresh vegetables on top it’s quite refreshing.
Fried Sauce Noodles is a classic Beijing dish. You will find it in many restaurants in Beijing, Tianjin and the surrounding areas in the north-east part of China.
